How to Make Stuffed Peppers with Rice

Stuffed peppers are a classic comfort food that’s easy to make and can be customized to your liking. This recipe will show you how to make stuffed peppers with rice, ground beef, and a variety of vegetables.

Ingredients

  • 6 bell peppers
  • 1 pound ground beef
  • 1 cup white rice
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cut the tops off the bell peppers and remove the seeds and ribs. Rinse the peppers with cold water.
  3. In a large skillet, brown the ground beef over medium heat. Drain off any excess fat.
  4. Add the rice, onion, green bell pepper, and red bell pepper to the skillet. Cook until the vegetables are tender, about 5 minutes.
  5. Stir in the tomato sauce, cheddar cheese, salt, and pepper. Cook until the sauce is heated through, about 2 minutes.
  6. Fill the bell peppers with the rice mixture. Place the peppers in a baking dish and bake for 30 minutes, or until the peppers are tender and the rice is cooked through.
  7. Serve hot.

Tips

  • To make your stuffed peppers healthier, use ground turkey or chicken instead of ground beef. You can also use brown rice instead of white rice.
  • For a vegetarian version of this recipe, omit the ground beef and use additional vegetables, such as mushrooms, zucchini, or sweet potatoes.
  • If you don’t have time to cook the rice ahead of time, you can use instant rice. Just be sure to follow the package directions.
  • Stuffed peppers can be made ahead of time and reheated in the oven or microwave.
